
Jam
filled Butter Cookies
¾ cup
butter softened
½ cup
white sugar
2 egg
yolks
1 ¾
cups all purpose flour
1 tsp
Vanilla
Pinch
of salt (if using unsalted butter)
½ cup
of Jam
Preheat
oven to 375 degrees F.
Cream
together butter, white sugar, egg yolk, and vanilla.
Gradually
mix in flour until a soft dough forms.
Roll
dough into 1 inch balls. If dough becomes too soft, refrigerate for 15 minutes.
Place
balls 2 inches apart onto an ungreased cookie sheet.
Use
your finger to make a small well in the center of each cookie.
Fill with ½ teaspoon of Jam.
Bake
for 8 to 10 minutes until the cookies are golden brown.
Cool on wire rack.
